Spinach Lasagna Recipe
Here's a lasagna recipe that would make Popeye proud!
Spinach Lasagna Recipe Ingredients
1 packet 'instant' lasagna noodle sheets
600g minced beef
600g tomato-based sauce
400g tomatoes (canned or fresh), diced
2 onions, chopped
250g spinach, chopped (frozen is fine)
400g ricotta cheese
200g Parmesan or Romano cheese, grated
2 cloves garlic, finely chopped or crushed
salt & pepper to taste
Spinach Lasagna Recipe Directions
Preheat oven to 350 degrees F (or 180 degrees C).
In a large frying pan, cook the onion and garlic for a couple of minutes.
Add in the minced beef.
Stir in tomatoes, tomato-based sauce and salt & pepper to taste.
Allow to simmer for 10-15 minutes over a low heat, stirring occasionally.
In a bowl, combine the spinach & ricotta cheese.
In the bottom of a large baking dish, spoon in a thin layer of the beef & tomato sauce.
Arrange a layer of pasta over the beef & tomato sauce, but try not to overlap the lasagna sheets (you may need to trim them).
Spoon in a full layer of the beef & tomato sauce.
On top of the sauce, spread a layer of the ricotta & spinach mixture.
Sprinkle some grated cheese on top.
Arrange another layer of lasagna noodle sheets - again, try not to overlap the noodle sheets.
Spread on a layer of beef & tomato sauce.
Add a layer of the ricotta & spinach mixture.
Sprinkle on some grated cheese.
Add a final layer of lasagna noodle sheets.
Spread a final thin layer of the beef & tomato sauce on top of the lasagna noodle sheets.
Scoop out the last of the ricotta & spinach mixture onto the top of the beef & tomato sauce.
Sprinkle with the remainder of the grated cheese.
Bake - uncovered - for 30-35 minutes.
Allow your Popeye-friendly lasagna to rest for 10 minutes before cutting and serving.
