A sensational sausage lasagna recipe that you can make as spicy as you like.

Sausage Lasagna Recipe Ingredients

500g sausages, cut into bite-sized pieces (I like to use Italian chilli or spicy beef, but you could use pork sausages or whichever ones you fancy - or a combination!)
1 packet of 'instant' lasagna sheets/ noodles (or make your own - see 'accompaniments')
500g tomatoes (canned or fresh), diced
2 onions, diced
2 cloves garlic, crushed, minced or very finely chopped
500g ricotta or cottage cheese
250g tomato sauce
250g mozzarella cheese
1/2 cup Parmesan cheese
1 egg, lightly beaten
1 tablespoon dried Italian seasoning, crushed
dried chilli flakes, to taste (optional but recommended)
1 teaspoon fennel seeds, crushed (optional but recommended)
1/4 teaspoon black pepper

Sausage Lasagna Recipe Directions

Preheat oven to 375 degrees F.
Starting with the meat sauce, in a large saucepan, cook the sausage pieces, onion and garlic until the sausages are browned.
Drain off and discard any fat.
Stir into the pot the diced tomatoes, tomato sauce, Italian spices, chilli flakes (optional but recommended), fennel seeds (again, optional but recommended) and black pepper.
Bring the mixutre to the boil, then reduce the heat and allow to simmer - uncovered - for 15 minutes, stirring occasionally.
In a bowl, combine half the Parmesan cheese with the ricotta or creamed cottage cheese, as well as the beaten egg.
In the bottom of a large baking dish, spread about half a cup of the sausage & tomato mixtre.
Place a layer of lasagna noodles/ sheets on top of the sausage & tomato mixture, but try not to overlap the lasagna noodles - you may need to trim them to fit.
Cover the lasagna noodles/ sheets with half of the ricotta & Parmesan mixture.
Top with half of the remaining sausage & tomato mixture.
Sprinkle half the mozzarella cheese on top.
Repeat layers.
Sprinkle remaining Parmesan cheese over the top of the lasagna.
Cover with aluminium foil.
Bake for 35 minutes.
Remove lasagna from oven, take off the aluminium foil, then put back into the oven to cook - uncovered - for another 10 minutes, or until Parmesan cheese on top has browned.
Allow your sausage lasagna to rest for 10 minutes before cutting and serving.
