Chilli Beef Tortilla Lasagna Recipe
This is a tasty Mexican beef & flour tortilla lasagna recipe you'll make again and again.
Chilli Beef Tortilla Lasagna Recipe Ingredients
10 flour tortillas
500g minced beef
500g cottage cheese
500g tomato sauce
1 cup salsa
1 packet taco seasoning mix (to taste)
2 eggs
1 teaspoon oregano
1.5 cups cheese, grated
1.5 teaspoons chilli, minced/ dried (optional)
Chilli Beef Tortilla Lasagna Recipe Directions
In a large frying pan, brown the beef then drain & discard the excess fat.
Stir in the salsa, tomato sauce, taco seasoning mix & chilli (optional but recommended!)
Simmer for 5 minutes, stirring frequently.
In a bowl, stir together the cottage cheese, eggs and oregano.
Line the bottom of a lightly greased 13x9 inch baking dish with half the tortillas (over-lapping the edges).
Top with half the meat mixture.
Spoon cottage cheese mixture over the meat.
Arrange the remaining tortillas over the cheese mixture.
Top with the remaining beef & tomato sauce.
Sprinkle the grated cheese over the top.
Cover the baking dish with aluminium foil and bake at 375 degrees F for 35 minutes.
Remove from oven and take off the foil, then continue baking for another 10 minutes, or until the cheese is browning.
Allow the lasagna to rest for 10 minutes before cutting and serving.
