Another Pumpkin Lasagna Recipe
This is a great healthy lasagna, vegetarian too!
Pumpkin Lasagna Recipe Ingredients
300g pumpkin, diced
1 large onion, chopped
240g instant lasagna sheets (preferably spinach)
2 cloves garlic, chopped finely
300g ricotta cheese
400g tomatoes, diced (either fresh or canned)
approx 10 basil leaves (fresh is best, but dried will do), roughly chopped
Pumpkin Lasagna Recipe Directions
Steam pumpkin and onion until tender (or microwave on High (100%) for 4 - 4.5 minutes, covered in a bowl).
Puree pumpkin and onion with garlic and cheese.
Season to taste with freshly ground pepper.
Layer lasagna and pumpkin filling alternately in a lightly greased dish, finishing with lasagna sheets.
Mix tomato with basil and cover with lasagne evenly. Cover with foil.
Cook at 180 degrees C for 30 minutes.
Allow lasagna to rest for 10 minutes before cutting and serving.
